My family were cattle and sheep graziers, and kept other animals, so very little was ever wasted. Brains, liver, kidneys, tongue. hocks, tripe etc.

In the 80's I was on a business trip in Taiwan and was taken out to lunch by one of the companies I visited. At the end of lunch I was told there was one more dish to come, a "small delicacy" from the cow. I was getting a little concerned. It came out in a broth and I had a look, with a bit of trepidation. I recognised it straight away, it was oxtail. Very yummy!

Didn’t watch it. the name Free Willy put me off. Thought it was about a dude wanting exactly that. Bit of man on man......not that there’s anything wrong with that.....

There was this chef at one of the roadhouses everyone just gave him shit for no reason on leaving he made Lamington's out of foam sponge blocks covered in chocolate and coconut funny thing is the amount of people who picked one up and tried to take a bite out of one.

On a trip to Norway once I ate caribou tongue and washed it down with aquavit, which is a hard alcoholic drink that's as powerful as jet fuel.
Oh awesome! Never had caribou tongue in Norway, but I did have an elk burger. 🤣

Love aquavit, had some in a remote northern norwegian town in the middle of winter, only to discover that the Linie Aquavit we were drinking had been to Australia. Felt surreal. In short this particular aquavit is matured while in casks that travel to Australia and back to Norway, with the changes in temperature and rocking motion having an impact on the taste...apparently. https://www.ateriet.com/linie-aquavit-amazing-journey/ and https://thornews.com/2012/01/13/linie-aquavit-crossing-the-equator-for-200-years/ give more details.

Camel in Saudi Arabia (quick note, the leg meat is really nice, the hump is the worst thing I’ve ever eaten and was the first step on my road to going vegan 😂)

scorpion in Iran ( a low point), bullfrog in the Philippines (surprisingly ok) and finally...................Escamols! If you’ve never heard of that, it’s a Mexican taco dish which is filled with mashed up ant larva! Didn’t know what it was when I ate it, but felt terrible when I found out later 😂
