how to make the perfect pancakes

Ingredients
  • 2 cups plain flour
  • 3 tsp baking powder
  • 1 pinch salt
  • 1/3 cups sugar
  • 50 gms butter melted
  • 2 egg beaten
  • 1 1/2 cups milk
  • 1 tbs butter
  • 100 mls maple syrup *to serve
Banana topping
  • 2 tbs butter
  • 2 tbs brown sugar
  • 3 banana peeled sliced
Method
  • STEP 1Sift flour, baking powder and salt.
  • STEP 2Whisk in sugar, butter, eggs and milk until smooth.
  • STEP 3Heat extra butter in a frying pan and pour batter to form circles approximately 15 cm in diameter.
  • STEP 4When pancakes bubble, flip and cook until browned.
  • STEP 5Banana topping: Melt butter in frying pan.
  • STEP 6Add sugar and stir until dissolved and bubbling.
  • STEP 7Add banana and cook until browned on both sides.
  • STEP 8Gently place onto pancakes and drizzle with maple syrup

I prefer my recipe:

1 cup wholemeal self raising flour
1 tbs coconut sugar
3/4 cup of milk...and more to add if you like it thinner
1 egg...

now sometime i use butter to cook them in or coconut oil...depends how naughty I'm feeling.

I just put all the dry ingrident in a bowl, then add the wet...mix it up and start cookin.

sorta healthy and delicious...

I make these pancakes every weekend :)

Ingredients

  • 1 tablespoon baking powder
  • 1 pinch of salt
  • 1 teaspoon granulated sugar
  • 2 large eggs (beaten)
  • 2 tablespoons butter (melted and cooled)
  • 1 ¼ cups milk
  • 1 ½ cups all-purpose flour
  • butter for frying
  1. The easiest way to make these is to put all the ingredients into a blender and blitz. But if you do mix up the batter by hand in a bowl, make a well in the flour, baking powder, salt and sugar, beat in the eggs, melted butter and milk, and transfer to a jug: it's much easier to pour the batter into the pan than to spoon it.
  2. Heat a smooth griddle or pan on the stove.
  3. When you cook the pancakes, all you need to remember is that when the upper side of the pancake is blistering and bubbling it's time to cook the second side, and this needs only about 1 minute, if that.
  4. I get about 16 silver-dollar-sized pancakes out of this.
