What determines the colour of Cum?
I've seen all sorts and wondered is it diet, genetics what?

That is a good question. Whenever this question comes up people say it depends on diet and I don't know if that is true or not. I've changed my diet and don't see any changes but maybe it depends on the person so maybe genetics does have somethin to do with it. Speaking for myself it's usually white or a mix of clear and white, but It certainly can be all clear if I cum more than once in a day... and if I go for a long time it can be slightly off white but I haven't seen that in years... haha.

Due to a variety of factors (most of which I am unaware of), semen may vary from very clear with almost no colour, to a very pure white, to a yellowish, almost near-orange colour.

Presumably diet, physical condition, hydration level, volume of sperm vs volume of filler (can't remember the scientific name - Google or Wikipedia will know) and a bunch of other factors will alter the colour of the sperm.

Also, since it is (generally) white, it may appear a different colour depending on the lighting in the room. Such as yellower under tungsten globes and greener under fluorescent globes. This can be more obvious when recorded (either video or images) though most cameras including mobiles do automatic colour-correction for differing lighting now anyway.
